Learn to make Maamoul, a tasty pastry sweet eaten during Easter in Palestine and Lebanon.

As you prepare and bake these biscuits, pray for the 5 million Palestinian refugees under UNRWA, and for all refugees who are seeking a way across the Mediterranean. Pray they would find true comfort in the Lord.

260g flour
170g semolina
220g butter
1/2 tsp mixed spice
1/2 tsp orange blossom water
2 1/2 tbsp sugar
2 tbsp milk
30g chopped pistachios, walnuts or almonds


In a medium bowl, beat the butter for 30 seconds. Slowly add in the flour and semolina until fully combined.
Stir in the milk, spices and orange blossom water to make a smooth dough,
Roll the dough into 12 pieces.
In a smaller bowl, mix the sugar and the nuts together.
With each dough piece, use your thumb to push a 5cm hollow and fill it with the nut mixture.
Fold and press the edges of the dough together to seal the filling inside (like a dumpling or doughnut).
Place on a baking tray and bake for 20 minutes at 180’C until golden brown.
