Ingredients

2 aubergines, sliced into circles about 2cm thick
1 tsp turmeric
1 tsp cayenne
1 tsp cumin
1 tsp salt
1/2 tsp garam masala
3 tbsp olive oil

 

Method

Mix the spices and oil in a small bowl or mug

Slather thickly on both sides of the aubergine slices, and stack to one stack

Carefully heat some oil in a frying pan, until it begins to bubble

Put a single layer of aubergine slices into the frying pan and saute them for 5 minutes

Flip them over, and gently fry the other side too

Serve warm, perhaps with rice, flatbreads or some fresh yoghurt
